[Recipe] Quinoa Stir Fry

Quinoa is an excellent grain to have in your pantry. It is naturally gluten-free and contains iron, B-vitamins, magnesium, phosphorus, potassium, calcium, vitamin E and fiber. It is one of only a few plant foods that are considered a complete protein and comprised of all pernine essential amino acids.

 

Ingredients:
2 Teapoon(T) olive or coconut oil
1 Teaspoon(T) minced garlic
1 Teaspoon(T) + 1 tablespoon(t) sambal chili paste
½ t ground cayenne
Salt & pepper
½ c chopped red & yellow peppers (a frozen pepper-onion mix works great for this)
1 c frozen mixed vegetables of your choice (okay to cook from frozen or thawed)
1 c cooked quinoa
½ c chopped kale
2 T chopped scallions or cilantro (optional)
Sriracha sauce (optional)

Directions:
1. Heat the oil in a large skillet. Add the garlic and cook over medium heat for about a minute or so, until it starts to become fragrant and turns slightly golden brown. Add the sambal, cayenne, and a generous pinch of salt & pepper, and mix well.

2. Next, add the peppers, mix well, and allow to cook until slightly softened. Add the frozen mixed vegetables and cook until tender, then add the quinoa. Stir until everything is incorporated and the quinoa is completely coated in the garlic-pepper mixture. Cook until heated through.

3. Lastly, add the chopped kale and turn off the heat. Mix into the quinoa and allow the heat to wilt the kale until tender. Check for flavor and adjust accordingly with extra seasonings.

4. Sprinkle the chopped scallions and/or cilantro over the dish, drizzle with Sriracha if you need to (most of us addicts do), and enjoy!
